Peanut Butter Date Bars

Ingredients
  

Peanut Butter Layer
  • 2½ cups flour
  • 1 tsp cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup all-natural peanut butter You can use creamy or chunky peanut butter.
  • ¼ cup coconut oil, melted
  • ¼ cup date paste
  • 50 grams low-sugar milk chocolate chips
Date Layer
  • 1½ cups walnuts, chopped
  • 2 tbsp cocoa powder
  • ¼ tsp salt
  • 10 Medjool dates, pitted
  • 2 tbsp water
  • 1 tbsp coconut oil, melted

Equipment

  • 1 Stand mixer (or handheld mixer)
  • 1 High speed blender (or food processor)
  • 1 Baking tray (10"x7")
  • Parchment paper
  • Plastic wrap (optional)

Method
 

  1. In a mixing bowl, mix together the flour, cinnamon and salt with a fork.
  2. Once combined add the rest of the ingredients for the peanut butter layer using a hand mixer.
  3. Prepare your baking tray by lining it with parchment paper allowing for there to be parchment paper hanging over on both long sides.
  4. Transfer the peanut butter layer to the baking pan and press it down evenly so that the entire surface of the pan is covered and it is uniformly distributed.
  5. We like to do this by laying a piece of plastic wrap over the peanut butter layer and pressing down on that and then smoothing it out.
  6. Cover with plastic wrap or parchment paper and then transfer to freezer for approximately 30 minutes.
  7. In a separate bowl, prepare the date layer by combining ingredients
  8. Place all of the date layer in ingredients into the pitcher of the high speed blender and blend until smooth. You may need to pat the ingredients down intermittently to ensure everything is getting blended and processed.
  9. Once your date layer is a smooth consistency, remove the pan from the freezer, uncover the peanut butter layer and spread the date layer evenly and smoothly on top of it.
  10. Cover the plastic wrap or parchment paper and return to freezer until frozen.
